Let's Eat PIE! (Mango Apple Pie)

Nothing like pie to make a girl feel good.
I bitched at my boyfriend last night. Now he's at wrestling camp, probably taking his emotions out on the mat. But where will I take out my frustrations? IN THE KITCHEN goddammit.


There's a lot of fruit in my house lately. We've been making a lot of juice. Today I made pie, inspired by the Cupcake Project. It doesn't really matter what kind of fruit you use, but I used an apple and two yellow mangoes. I made 6 mini pies in a muffin pan. This pie ROCKS because the crust has orange zest, which makes it a nice complement to the fruit filling.

Simple Lemon Cake + Glaze

Light and refreshing.
It's summertime! You need something light to satisfy your sweet tooth! Here is a simple cake, extra lemony from the lemon zest and lemon glaze. The lemon keeps this cake from being too sweet and heavy. You can bake it in whatever pan you want-- I used an 8x8, but I imagine this would be even lovelier in a loaf pan as a pound cake sort of thing. The recipe is adapted from the Williams Sonoma Baking book.

Raspberry Brownies!

At long last, testing season is coming to an end! I took the SAT twice, three SAT II's, three AP's, the ACT, wrote three final papers, AND took final exams at school, all within the past few months. This lean, mean, test-taking machine is ready for the summer.

Brownies + S'mores

I cannot study for my last Latin test of the year anymore. Gotta take a break and make some foooooood:

I promise this tastes a lot better than it looks.
I'm not sure what to call these. They're brownies, with marshmallows and graham crackers and chocolate... It's like a brownie and a s'more decided to have a baby, and the baby was born in a cupcake paper so the baker (moi) wouldn't have to clean the pan...

Ok so I'm not Japanese, but Google Translator helped me figure out how to say "Cupcakes for Japan"...

Today I baked for an event called Rise Again: The Concert for Japan Earthquake Relief. There's going to be a bake sale of some sort (I admit I don't know all the details), but the main event consists of performances by various singers, dancers, and taiko drummers!

Apple Bacon Muffins with Maple Syrup Glaze

It's MUFFIN TIME.

These muffins have pieces of apple and bacon in them and are NOT sweet, which is why I added a maple syrup glaze to balance the saltiness of the bacon. It makes for a delicious breakfast item. Next week, I shall attempt to turn these into donuts!! The recipe is from the Williams-Sonoma baking book, but I made a few minor changes here and there. Posted is my version of the recipe.
