It's summertime! You need something light to satisfy your sweet tooth! Here is a simple cake, extra lemony from the lemon zest and lemon glaze. The lemon keeps this cake from being too sweet and heavy. You can bake it in whatever pan you want-- I used an 8x8, but I imagine this would be even lovelier in a loaf pan as a pound cake sort of thing. These muffins have pieces of apple and bacon in them and are NOT sweet, which is why I added a maple syrup glaze to balance the saltiness of the bacon. It makes for a delicious breakfast item. Next week, I shall attempt to turn these into donuts!! The recipe is from the Williams-Sonoma baking book, but I made a few minor changes here and there. The recipe is from Beantown Baker. I pretty much followed her recipe exactly, EXCEPT I used 1.5 cups of sugar, which is a little less than what she recommended. They came out great; I didn't want the cake to be too sweet since the frosting was super sweet, too.
